Ingredients:

This cream delicately spiced cream is rich in flavor and made with fresh green asparagus.

60% green asparagus, potatoes, extra virgin olive oil, onion, groentebouilion (water, salt, pepper, cloves, carrot, zucchini, tomato, parsley, onion, leek), sea salt from Cervia.

Suggested use:

Because of this cream using only fresh green asparagus. The cream is rich in aromas and taste. The sauce is ideal as a companion of boiled eggs and also fits very well with fish and white meat. The cream is ideal to bring the risotto with taste and as a filling for a delicate pasta.

After opening, this product is perishable and should be stored in the refrigerator.

Crostini with Green Asparagus cream
Green asparagus are very popular in Italy. In the spring you will see in Italy a few days after the rain, often people with baskets and buckets in the hillside. Everyone has a secret place somewhere where asparagus, herbs and mushrooms or grow. The shoots are thin and by exposure to light green. This asparagus usually do not need to be peeled. For use, they are washed and the woody part of the stem removed.
Green asparagus is also like incorporated into risotto and frittata. The way to deal with them in a crema is to preserve them. In this way there is still a long way to enjoy the distinctive taste of this vegetable.
  • 8-10 slices   sourdough or ciabatta or sourdough ciabatta
  • Crema di Asparagi Verde (Amerigo 1934)
  • Olive Oil
  • Clove of garlic
  • Basil, mint or parsley leaves
  • Salt
  • Pepper
  • Parmigiano Reggiano
Toast the bread slices lightly,
Preheat the crema that Asparagi a bit. If you find it too thick cream you can dilute it with a little hot water or vegetable stock.
Cut the garlic clove through the middle and rub with the cut side light on the toasted bread. Drizzle bread with extra virgin olive oil
Spoon the Crema di Asparagi Verde on the bread and season with salt and pepper
Schaaf some shavings of Parmigiano Reggiano and sprinkle it over the crema it.
Finish off with some finely chopped basil, mint or parsley.
Serve with a glass of sparkling white wine
Recommends: Bianco di Pitigliano Montauto a spicy white wine from Pitigliano (Tuscany) where it is clear to see that the grapes grow close to the sea and where tones of elderflower in to detect.
