INTRODUCE

Maria Inckmann-van Gaalen and Kees van Gaalen.
Since 2008 they live and work at the organic Noorderlicht cheese farm in the beautiful Alblasserwaard. Even though the cheese farm is new, they continue a tradition of making cheese in a traditional and natural way.

Maria and Kees have an organic farm out of conviction. Agriculture is intertwined with nature. In harmony with each other, this provides healthy and fair food, for now and for the future.

They are happy to welcome you to their farm.

WILD MEADOW CHEESE

To make top quality cheese, everything has to be right: the best feed based on spicy pastures, good and well-kept cows and the craftsmanship to turn the raw milk into a tasty cheese.

Noorderlicht has had these businesses for years and is equipped with the most modern equipment to make the now famous Wilde Weide cheese. Top quality organic farm cheese. Wilde Weide: regional product of the year 2005!

Most of the cows are of the Blaarkop breed, with the characteristic white head and black-rimmed eyes. It is now a rare breed, which traditionally occurs in the Oude Rijn region, the region where Maria and Kees come from. Blister heads fit very well in organic business operations. They are strong, gentle and can handle very little. They also give milk of exceptional quality, which lends itself well to making cheese.
