Daan de Bruin is in a class of its own. His farm is small, with only 35 dairy cows and about 500 laying hens, but enough for him to lead a good life. He has been organic for years (SKAL no. 013538), but likes to take it a step further by following the ideas of Joel Salentin.
The laying hens are not housed in a pen or a large run, but they inhabit a pilot whale forest in the back of the country. There they find adequate undergrowth and grass, because an organic chicken that cannot eat grass is not an organic chicken, according to Daan.
The cheese is made by Biokaas Kinderdijk and is made on the basis of vegetarian rennet.
