Miso is a traditional flavoring of Japanese cuisine. It is made by fermenting soybeans with salt and koji (a fungus that activates enzymes in rice to convert the starch present into simple sugars) and sometimes rice, barley, seaweed or other ingredients. The result is a thick paste that is used for sauces, pickling vegetables or to mix with dashi to make miso soup.
 
The dark variety has gone through a longer fermentation period, which gives it a stronger, more exciting and heartier taste than this light, regular variety.
