Miso is a traditional flavoring of Japanese cuisine. It is made by fermenting soybeans with salt and koji (a fungus that activates enzymes in rice to convert the starch present into simple sugars) and sometimes rice, barley, seaweed or other ingredients. The result is a thick paste that is used for sauces, pickling vegetables or to mix with dashi to make miso soup.
This dark variant has had a longer fermentation period, which gives it a stronger, more exciting and heartier taste than the light variant. In addition to the other fermentation method, more soy and salt have been added to this miso, which makes the taste more intense.
