This butter is churned out old-fashioned. After churning, the butter is packed in boxes of 250 grams and 1 kg in greaseproof paper.

Butter butter (Braune Butter)

According to us, brown butter is an unknown phenomenon in the Netherlands, but German chefs are very happy to cooperate. It looks at clarified butter, but it is something completely different. Many chefs use it to give vegetables a bit more refinement, but it can also be used to add extra flavor to pastries and meat.

For baking it has the advantage that the smoke point is much higher than with normal butter and that all the water is out of it so that it does not splash.

It is easy to make and to keep in stock, because it stays good for a long time. However, it is useful to use cheesecloth instead of kitchen paper.

The procedure is - as said - simple.

Melt butter on low heat in a saucepan, at a certain moment the butter starts to foam and the protein comes to the surface. After a while, the color changes to something resembling amber. Pay attention now, because the butter must absolutely not burn. As soon as small brown pieces of baking surface come to the surface, remove the pan from the heat.

Let the butter cool slightly and pour it through a cheesecloth covered sieve. The pieces of baking are delicious on bread and the liquid nut butter is poured into a pot or tray for later use. As said, very tasty and even better if you make it from farmer's butter .
